Mummi's S Cookies


Ingredients:
- 3 eggs
- Sugar 200 grams
- Butter 75 grams(about 1/2 stick), soften (microwave ~10 secs)
- all purpose flour


Steps

1. Put eggs and sugar in a big mixing bowl.  Mix for 3-4 minutes (until blended well)
    2. Put soften butter in a small mixing bowl, mix the butter (by itself)
      3. add butter from 2) and some flour in the big mixing bowl
        4. add flour a little bit at a time.  Use the mixing spoon to fold the dough and feel it.  It should feel like play-doh. (not too hard, or the butter and cinnamon wont stick to it)
          5. Put the dough in the fridge about 2 hours
            6. Preheat oven to 375F.  Bake for 7-8 minutes or until golden brown.

            Mummi's Shortbread Cookies

            Ingredients:
            Cookie dough
            - Salted Butter  150gram. (1 stick)
            - Sugar 150 gram.  (3/4 cup)
            - Heavy cream 1 deci liter (~ 1/2 cup)
            - 1 egg
            - All purpose flour 400 gram
            - baking soda. 1 teaspoon
            Apple sauce
            - Apples, sugar


            Steps


          1. Wet ingredients

            1. Soften (~ 10-15 secs in microwave). Mix the butter well in a bowl
            2. Add sugar and hand mix it with soften butter
            3. Add egg and cream while mixing in the bowl



          2. Dry ingredients

            1. Mix baking soda with flour
            2. while mixing 3) add the dry ingredients a little bit at a time.  When done, the end product (dough) should not stick toyour finger
            3. cover the dough with parchment paper and put the bowl in the fridge for a few hours (until it's cool down)



          3. Apple Sauce (glue layer)

            1. Peel apples, dice, and take out seeds.  Put in a pot, add just a little water to prevent burning
            2. Heat up the pot, add sugar (for a 2-liter pot, use about 1/2 kg of sugar) simmer till apples are well cook
            3. Drain off some juice to thicken the jam
            4. when done, use strainer and squeeze in pulps through.  Save jam in a jar



          4. Bake

            1. Heat  the oven to 375F
            2. Take the dough out from the fridge.  Let it soften a bit.   Prepare some flour and roll the dough flat to 2-3 mm thick. 
            3. Cut the dough to about 2-inch diameter, place on the baking sheet with parchment paper lined
            4. Bake about 7-8 minutes (cookies will turn light brown)
            5. Take cookies out, let them cool down.
            6. Paste apple sauce on one side, put another cookie on top
            7. Let them set for a few hours
            8. Paste chocolate on top, decorate with sprinkle
